Vinification
The average cold temperatures at night and during the day increased the fruit acidity and grape quality of Chardonnay. The Chardonnay was planted in limestone-rich soils by Robertson. This made for a nice fruit expression. At Pinot Noir, the cold weather in October and November led to smaller berry sizes, resulting in better fruit concentration. The Pinot Noir was grown in cooler locations in False Bay, which contributed to the fresh acidity. The grapes were picked by hand early in the morning and pressed into whole bundles. Only the juice from the free run was used and the two grape varieties were vinified separately in stainless steel tanks. During the secondary fermentation, the MCC matured for 10 months on the lees in the bottle. After remuage, the non-vintage Brut was degoged and a dosage of 8.4 g/l was added.
