About the wine

What is unique here is that organic viticulture has never been sacrificed to the appeal of productivity through mechanization and chemistry. And this innovative spirit in retrospect and climate change has survived all the generational changes, wars and separations, shapes the winery is today, e.g. the family-owned, often patented inventions such as Joseph Binner's horizontal press or the development of the winery and natural winegrowing in general under Christian Binner, also Chairman of the Alsatian natural wine winegrowers' association Association des Vins Libre d'Alsace. From working in vineyards and cellars to aesthetically, functionally and ecologically captivating architecture - unique, innovative. In 2016, Christian did not buy additional plots of land, but rented out a large part of it in order to devote himself to the privileged locations with all his passion. Top-class biodynamic wines with extreme ageing potential!

Tasting note
Mick Jagger, the grandfather, remains Mick Jagger - lives away, the peace within himself, no matter how damn harsh and sexy. Now radiates this warm, tart happiness, such golden, oxidative fruit, lots of yeasts, stone fruit, wax, so harmoniously interwoven - something like that - tart vegetable notes, hey, that's how you can age, so appealing. On the palate as beautiful as it is tart, it foams so calmly, and yet still rocks the palate, that is banal fruit, that is a lived life, this golden oxidative fruit and still this sinewy, tart nature, it all claws and into the palate, and yet it no longer needs it, the masculine, energetic minerality so beautifully embedded into this golden mildness, serenity. Very, very horny frother: everyone is so mature and still rocks!
Culinary recommendation
Recommended by Flaschenpöstlern: Le Scarabée Qui Bulle VdF Bio goes well with prawns, Indian cuisine and mushrooms.
Vinification
Selective reading by hand. Very slow fermentation with vineyard's own yeasts, maturation for 24 months in old oak barrels on the lees, unsulphurized, unfiltered, unembellished
