About the wine
Fabien Jouves a young savage? You might think so, but first and foremost a young person of victorious youth, and independence. Mas del Périé is anything but a provocation, but in 2009, barely in his mid-20s, Fabien took over the 12-hectare estate south of Cahors from his parents, questioned everything and remade many of them. Mas del Périé today stands for natural winemaking and wines, without constricting corsets, biodynamic, complete abandonment of additives in the vineyard and cellar, and these wines have something divine, tender, embody happiness and peace, nature here resembles the harmonious, untouched and not an untamed, wild place. Wonderful wines that touch and delight the soul.

Tasting note
The fruity bouquet of passion fruit, nectarine and basil shows a complex aroma character and plenty of pleasure potential. The distinctive notes of lime and green apple shape their individual texture. With a light body and distinctive acidity, this white wine presents its impeccable structure.

Recommended by Flaschenpöstlern: Goes well with goat cheese, white meat and fish.
Vinification
Information on vinification: Selective harvesting by hand. Natural vinification without additives. Long fermentation, whole grape fermentation with vineyard's own yeasts, aging in concrete tanks and large wooden barrels. No fining or filtration, only minimal use of sulfur.
