The Llunari is an orange wine, i.e. a white wine that is produced like a red wine. The grapes are harvested by hand, completely destemmed and then crushed and placed in a cement tank. Cold maceration takes place there until alcoholic fermentation begins. In total, the must and the resulting wine remain in contact with the grape skins for 20 days until the mash is pressed. The wine is then transferred to 600-liter clay amphorae, where it is aged for 5 months.
