About the wine
A high-quality Primitivo with complex aromas and archaic power. Harmonious, with well-integrated tannins — and endlessly reverberating like the old legends from Manduria.
Tasting note
It delights with aromas of ripe dark berries, plums, figs and a touch of spices and chocolate. On the palate, it has a velvety texture, well-integrated tannins and a pleasant balance between fruit sweetness and acidity. The long, harmonious finish underlines its elegance and depth.
Culinary recommendation
Goes well with roasts, stewed meats and aged cheeses.
Vinification
After harvesting, the grapes are destemmed, leaving the berries intact to protect the skins and achieve optimal color yield. Fermentation takes place in stainless steel tanks at controlled temperatures of 23-25 °C over a period of 8-10 days. During this time, regular remontages and déledays are carried out to ensure gentle extraction of aromas and tannins. After the alcoholic fermentation is complete, malolactic fermentation is initiated. The wine is then aged in barriques for at least 6 months.
