About the wine
“If you don't dare, you won't win,” thought the Masi winery. The traditional Appassimento process was used to produce Moxxé Pinot Grigio Brut. This means that the grapes were dried before fermentation. The result is this wonderful, trendy sparkling wine. An absolute piece of jewelry that not only at an aperitif for an “OH WOW!” cares.
Tasting note
Brilliant salmon pink color with lively perlage. The bouquet reveals delicate fruit notes that are reminiscent of wild berries, in particular wild strawberries. On the palate, it appears fresh and flowing, yet at the same time winning thanks to a pleasant note of ripe fruit, which also accompanies the long and significantly dry finish.
Culinary recommendation
It goes well with roast beef, vegetable quiche and fish.
Vinification
The Pinot Grigio harvested at the end of August is vinified after the grapes have been slightly dried for about 20 days. Mild maceration in a grape press, for approx. 2 hours at a temperature of 15°C with simultaneous gentle pressing. The must obtained in this way is characterized by the unique copper color of Pinot Grigio, whose intensity is further increased by the slight appassimento. Fermentation takes place at low temperatures between 15 and 20°C and lasts 25 days, so that freshness and fragrance are emphasized. The malolactic fermentation is stopped to maintain acidity. This is followed by secting using the Charmat process.
