Tasting note
Complex bouquet of fruitcake, cedarwood, cocoa and a touch of dried lavender. Broad, meaty and juicy on the palate with everything the nose promises. spices, cedarwood with a rich, dark fruitcake flavor. Wonderfully soft, round and silky palate that shows coherence and refinement. Impressive density and concentration that is overwhelming. Plush, pleasant and extremely harmonious, with a warm long finish.

Great accompaniment to all hearty meat dishes.
Vinification
The grapes come from a selection of vineyards at our company in Rooderust and L'Ormarins. This combination adds to the complexity of the fruit and the structure of the wine. All grapes were sorted using an optical sorting machine to ensure that only the best quality grapes are used for winemaking. The wine was fermented on the skin in various fermentation containers and subjected to prolonged maceration after fermentation. The Optima was finally aged in 225 liter French oak barrels for 20 months, using 30% new oak.
