About the wine
The roots of Cantina il Cavaliere (The Knight) date back to 1895. Today, the company is run by Roberto and his wife Tiziana Belossi. A modern winery and the necessary expertise from the oenologist team create wines of exceptional quality. The vines cover almost twelve hectares. More than 95,000 bottles are filled annually.
Tasting note
Full-bodied, spicy, light vanilla note, balanced in its texture, with a full-bodied and aromatic palate, with a long, slightly spicy finish. A wine with a well-structured consistency and good bite. Scent of exotic fruits, such as pineapple, mango, banana.
Culinary recommendation
Goes well with aperitifs, fish, fresh cheese and white meat.
Vinification
Hand-picked with optimal ripeness of the grapes. Gentle pressing and destemming every 30 minutes using a horizontal press. Gentle pressing of the shells with a pneumatically operated press. flotation of grape must. Heat the mass to 16°C, prepare for the start of fermentation in wooden barrels from Burgundy to start the alcoholic fermentation. At the end of the fermentation, the wine remains in barrique on the lees for 11 months (batonage) between alcoholic fermentation and malolactic fermentation. Before bottling, it is assembled and filtered.
