Tasting note
Brilliant and lively dusky pink color. In the glass, the noble rosé is presented with the finest perlage. The bouquet is lush and multifaceted, reminiscent of cherries, dog roses and oranges. On the nose, this Riserva looks almost more like a still wine than a sparkling wine. The palate has a rich and fleshy structure, full and powerful, but without losing balance. Long and digestible finish, with notes of red fruits and gingerbread.
Culinary recommendation
The fresh and slightly spicy taste of Pinot Nero goes wonderfully with the fat lardo from Colonnata
Vinification
A normal start of spring in 2013 was followed by an exceptionally rainy period, which put the professionalism of the winemakers to the test. With the onset of summer, weather conditions stabilized and optimism and joy returned to the vineyards with the sun. The shoots of vines, as well as flowering, began late, but then went evenly and normally. The ripening phase of the grapes in August was slow, suggesting a mid-late harvest with increasing harvest volume, good grape health and excellent quality. This excellent sparkling wine matures on the lees for at least 5 years.
