Tasting note
What is Pet-Nat Pet-Nat is a slightly sparkling so-called natural wine produced according to the “Ancestral” method. In the “Metódo Ancestral”, the sugar, which is important for alcohol production, comes entirely from the grape. This means that the grape must have reached a perfect degree of ripeness before it is harvested, and thus unlike the “Champenoise” method. The main difference between the two, as already mentioned, is the addition or non-addition of sugar. The Ancestral method consists of bottling the wine in the middle of the fermentation and letting it finish in the bottle. As a result, the gas produced at the end of fermentation does not escape and becomes the bubbles of the wine. In contrast, the champenoise method consists of bottling an already fermented still wine and adding sugar and yeast so that a second fermentation can take place in the bottle, completely independent of the first. In terms of color, it is pink with pale orange reflections. On the nose, hints of apple, pear and wild strawberries. The palate is then refreshing with notes of forest fruits and pome fruit. Well balanced and very pleasant finish.

Goes well as an aperitif, with fish or vegetable-based cold starters, black chocolate, almond-based dry pastries.
