The grapes come from a vineyard on the upper slopes of the Fairview farm on Paarl. The vineyard was planted in 2004 on decomposed granite soils. Management practices for summer canopies include removing leaves to open the canopy to sunlight and some tipping actions. The yield is controlled by dropping grapes after the season. The grapes were picked by hand on March 7, 2015. The fruits were sorted by hand using a sorting table, where damaged and burnt berries were removed. Fermentation took place in a foudre (open French oak vat), after which the skins were carefully basket pressed. The wine was aged in 60% new French oak barrels, 10% new American oak barrels and the rest was aged in French and American oak with 2nd and 3rd fill. The wine was allowed to age in barrels for 20 months before it was bottled, lightly filtered and bottled.
