About the wine

Tasting note
Intense, lively ruby with light purple reflections. Dense, complex aroma blanket. On the nose, a scent of ripe, red cherries, spicy undergrowth notes, light toasted notes, some incense. On the palate, an elegant start, almost flattering, balsamic. Then a remarkable tannic acid structure. Grippy and juicy. Again, cherry-fruity aromas, balsamic and subtle barrique notes. The finish is aromatic, tannic and of good length. A witty wine!
Culinary recommendation
Goes well with any type of meat, pot roast, but also with hearty stews.
Vinification
This wine is made from the venerable, almost disappeared Pignolo grape, which was rediscovered in recent decades and replanted in Collio. The grapes are harvested by hand. After gently pressing the grapes, the mash is fermented in steel tanks at a controlled temperature. The wine is then aged and refined for at least 24 months in new French Allier oak barrels of 225 l. The wine is then left to rest in the bottle for at least one year before being sold.
