Bio
Tasting note
The grapes come from the Birthal vineyard, which contains sandy soils with lime. A beguiling wine that shows tremendous finesse even in youth, delicate Burgundian style, silky, rich in finesse, seductive power paired with gigantic spice, lots of charm, brilliant fruit and a charismatic never-ending finale.
Vinification
After reeling and squeezing, the juice and berries (approx. 5% with stalks) are left together for at least 30 days and pressed in daily by hand; the biological acid breakdown and subsequent storage take place in 70% new and 30% used French oak.
