About the wine

The name says it all: Histoire d'Enfer (Hell's Story) creates wines that are good as hell. Need proof? The recently published ranking of the “100 most beautiful wines in Switzerland” (Schweizerische Weinzeitung) includes no less than 3 wines from Histoire d'Enfer — more than from any other winery, and all in the TOP 40! The initiator, co-founder and boss is Geneva doctor Patrick Regamey. It is just as much a natural phenomenon as his biodynamically produced wines... Rigorous triage of the grapes, whole grape pressing (including the stems) in the top wines and meticulous selection of the best barriques are cited by the doctor and autodidact as the most important quality factors. He is even on the scientific council of barrique manufacturer Taransaud and, according to his own statements, has also conducted research on wood. He must also have a fine nose, as he is a member of the tasting group of the European Grand Jury. No, the extremely eloquent but likeable doctor is certainly not lacking in self-confidence, but the exceptional quality of his wines proves him right in every respect. We're thrilled!

Tasting note
Three Pinot Noir from Histoire D'Enfer with us. It's a dilemma, you imagine you meet your dream woman… and she has two twin sisters. All not easy tempers, aesthetically, intellectually, also demanding. But spirit is not enlightenment here, not enlightenment, not angels, not naive beauty, dark clouds also rise here, drawn to and challenging the dark forces. No more way out, you have to accompany them. CALCAIRE ABSOLU is the most resolute, daring of the dark sisters, venturing far down, again and again bright sweet Pinot fruit in the dark, also blackcurrant, ethereal notes, otherwise gloomy, like in a tunnel, lots of stones, ash lime, leads down into abysses. On the palate, tart, sweet, dark, dense fruit, deep and impenetrable, ethereal, undergrowth, very chalky, dark, cutting minerality, seems to get lost in a dark fantasy, only to finally see the soft, warm light of the Pinot fruit. Hell is only a dark and bitter obsession? Fascinating depth and complexity. Big.
Culinary recommendation
The wine should be enjoyed during this period: Now until 2035. Flaschenpost team tip: Pinot Noir Calcaire absolu AOC goes well with salmon, duck and red meat.
Vinification
Highly selective reading by hand. Whole grape fermentation, moderate use of new small oak barrels.
