Tasting note
The latest prank by David Levasseur: With a focus on varietal specificity, in the interplay of reflecting the character of each vintage, he bottled a single-varietal Chardonnay, a Pinot Noir and a Meunier, in limited quantities and exclusively in Magnum. The base wine was aged in oak barrels without BSA. Characterful nose with aromas of juicy cherries, baked apples, pears and some apricot compote, plus a fine exoticism in the form of fresh pineapple, framed with fine smoky notes of roasted hazelnuts, Assam tea and a touch of vanillin. Fine, almost dance-like start to the palate, yet close-meshed, dense and focused, supported by crisp freshness, a light tannin structure and again finely exotic fruit, with a delicate touch of salt on the finish. RARITY - ONLY 155 MAGNUMS PRODUCED!
Culinary recommendation
Due to its dense texture and aromatic profile, it also goes well with slightly stronger fish dishes and seafood, such as fruity-spicy fish soup or grilled lobster with “Maltaise sauce”, but also with poultry, such as corn soulard breast filled with goat cheese and herbs.
