About the wine
Young winemaker Oliver Lemstra earned his stripes on his parents’ vineyard in Burgundy. Feeling the need to stand on his own two feet, he abandoned his native Burgundy, but not his beloved Pinot Noir. He now produces with great success in the south of France.
Tasting note
Magnificent ruby red color. The freshness and balance is clearly noticeable on the palate with light and round tannins. The aromas are reminiscent of red fruits and soft spices.
Culinary recommendation
A wine for all seasons. Goes particularly well with salmon or other types of fish. Also good with chicken with autumn vegetables and quinoa.
Vinification
After harvesting, the grapes are destemmed and subjected to a 3-4 day cold maceration, which unfolds the maximum of the classic fruitiness of Pinot Nois.
