Tasting note
Very dense, intensely violet-red color. Blackberry jam, plums, cherries and cassis meet fresh strawberries and violets in this varietal Pinotage. There are also delicate wood tones, with nuances of earth, leather and spicy herbs. Strong, powerful, deep and robust, with a good balance between fruit, acidity and wood, long-lasting.
Culinary recommendation
Flaschenpost team tip: Pinotage Stellenbosch goes perfectly with strong cheese platters, pasta Bolognese and salami. Our recommendation: The red wine tastes best at a slightly chilled 16°-18°C.
Vinification
Only grapes from old clones (various bush forms) are used for this pinotage. The fermentation takes place in open fermentation vats. The pinotage remains on the mash for 5 days, after which it is pressed and stored in barrels for a short time (6 months). As a result of this brief contact, the wine benefits from mico-oxidation without absorbing too much of the wood aroma.
