Pétillant Naturel, or Pet Nat for short, or in this case, Pitt Nat is the oldest and most natural method of sparkling wine production. The must is filled into the bottle while still fermenting, where, closed with a bottle cap, it is finished fermenting. So no second fermentation, as with champagne, for example.
