Pétillant Naturel, or in this case Pet Nat or in this case Pitt Nat is the oldest and most natural method of sparkling wine production. The must is filled into the bottle while still fermenting, where it, sealed with a bottle cap, completes fermentation. So no second fermentation, as with champagne, for example.
