The winemaker from the Italian winery Tenuta dell'Ornellaia is absolutely proficient in his craft. Elegance and finesse are the characteristics of this white wine, which originates in the flourishing and fertile Tuscan countryside. Tasting note
Soft yellow with greenish reflections. The nose is caressed by wonderfully aromatic impressions: plenty of citrus notes, herbal nuances and a touch of exoticism. The palate reveals a juicy, creamy structure characterized by bâtonnage. The aftertaste is long, fresh and complex.
Culinary recommendation
Goes well with grilled Mediterranean fish, all types of seafood and white meats.
Vinification
The grapes were picked by hand in the first hours of the morning and transported in 15 kilo containers to the winery, where they were immediately refrigerated to retain their full aroma potential. After careful selection, the grapes were pressed slowly and gently, taking particular care to protect them from oxidation. After clarification lasting approximately 12 hours, 23% of the musts were transferred into new barriques and 27% into used barriques, the remaining 50% into containers made of steel, concrete or wood. The alcoholic fermentation did not exceed 22°C. No malolactic fermentation was used. During the 6-month expansion, the sediment was stirred up at fixed intervals. Before bottling, the various batches were intermarried and slightly fined. The wine then underwent a final refinement in the bottle lasting 12 months before it was on the market.
