About the wine
Schola Sarmenti, home to beautiful walls from the nineteenth century, stands vineyards with autochthonous grape varieties with vines up to 80 years old, which are skillfully and patiently tended. During the harvest, only the best grapes are selected, which were allowed to grow in an environment of respect and love for nature.
Tasting note
This primitivo from old vines impresses with its strong ruby red color. On the nose, an aroma pot purri of dried fruits, ripe berries, cranberry, some tobacco, chocolate and pleasantly spicy notes. On the palate, the seemingly endless fruit is supported by a slightly sweet start, spicy aromas of mocha, gingerbread and a hint of eucalyptus, a velvety mouthfeel and a long fruity finish. A full-bodied and complex Primitivo that fully expresses the concentrated grapes of the old vines.
Culinary recommendation
Goes well with Italian pasta dishes, grilled meats, beef, veal, lamb and game dishes, pizza and mature cheeses
Vinification
The grapes for this Primitivo come from vines that are 65 years old on average, all of which are grown in the Alberello system. The grapes are harvested by hand and sorted again on the winery. After fermentation, the wine is aged for 6 months in French tonneaux as a second occupation before maturing in the bottle for at least 8 more months.
