About the wine
Schola Sarmenti, home to beautiful walls from the nineteenth century, stands vineyards with autochthonous grape varieties with up to 80-year-old vines, which are skillfully and patiently cultivated. When harvested, only the best grapes are selected, which have been allowed to grow in an environment of respect and love for nature.
Tasting note
This primitivo from old vines impresses with its strong ruby red. On the nose, a potpurri of dried fruits, ripe berries, cranberries, some tobacco, chocolate and pleasantly spicy notes. On the palate, the seemingly endless fruit delights with a slightly sweet start, spicy aromas of mocha, gingerbread and a touch of eucalyptus, a velvety mouthfeel and a long fruity finish. A full-bodied and complex Primitivo that fully expresses the concentrated grapes of the old vines.
Culinary recommendation
It goes well with Italian pasta dishes, barbecues, beef, veal, lamb, game dishes and pizza and ripe cheeses.
Vinification
The grapes for this Primitivo come from vines of an average age of 65 years, all of which are grown in the Alberello system. The grapes are picked by hand and sorted again at the winery. After fermentation, the wine is aged for 6 months in French tonneaux as a second dressing before maturing in the bottle for at least another 8 months.
