Fairview is known for promoting this proud native grape and tells the story of Pinotage by proving the great heights that the variety can reach with Primo. Our award-winning Primo is bursting with ripe, dark fruit on the nose, elegant tannins and a long cigar box finish. Soil: duplex glenrosa floors. The grapes were harvested by hand at an average temperature of 25° Brix. Next, the grapes were destemmed and sorted by hand to remove raisins and green stalks. The fermentation took place in French oak fermenters with an open lid (foudre), and manual punching downs (pigeage) were carried out twice a day. After the alcoholic fermentation was completed, the wine was pressed in the basket and transferred to French oak barrels for malolactic fermentation, with 45% of the barrels consisting of new oak. The wine aged in oak barrels for a total of 22 months.
