Tasting note
Baking spices, dark chocolate and black, vibrant fruits hint at the power that will follow. Complex aromas of pure cassis, flesh and oak spice result in a well-integrated fruit core with dense but finely balanced tannins. This is a wonderful blend where the components are expressive but well balanced. Powerful, explosive and of medium to full body, with the precision of 2017, which shines through in a long, defined finish.
Culinary recommendation
Goes well with hearty meat dishes with lamb, beef or game.
Vinification
The Proprietor's Blend is a blend of six grape varieties that are grown on the property. These vineyards grow on the warm, north-facing slopes of the Helderberg region within the Stellenbosch appellation. These special varieties thrive under these conditions and produce rich, full-bodied red wines. With an altitude of about 250 meters above sea level, along with the cooling influence of the Atlantic, the ripening period can be extended, resulting in wines with phenolic maturity. The grapes are harvested by hand in the early morning coolness. Whole berries are fermented in open tanks and barrels with intermittent pumping and parting to ensure a balance between flavor, color and tannin extraction from the skins. All fermentations are meticulously monitored to ensure that all natural flavors and flavors are retained. After primary fermentation, some tanks undergo prolonged maceration. Each variety is matured separately in oak before final blending. Aged for 18 months. 95% in 300 liter French oak barrels (35% new) and 5% in 300 liter American oak barrels (30% new).
