Tasting note
Deep, almost inky purple. Intense, complex bouquet with notes of blackberries, caramel and chocolate. The palate is rich and very complex with soft tannins, a fine acidity and aromas of dark berries. Long finish.
Culinary recommendation
Goes particularly well with dark, strong meat.
Vinification
Cold maceration for 6-8 days at 6°C. The alcoholic fermentation lasts 15-17 days at 27-30° C. After fermentation, a further maceration for about 15 days. This is followed by malolactic fermentation and aging in French oak barriques for 12 months.
