After careful selection, the grapes are spread out in small wooden crates in dry, well-ventilated rooms to dry. This achieves an extraordinary concentration of all ingredients. The must ferments very slowly due to the cold winter temperature. When an alcohol content of 12% vol is reached, fermentation is prevented by refilling, filtering and cooling, so the wine remains sweet.
