Vinification
Everything about this wine is art. Selection of the best grapes. After careful fermentation in French oak fermentation vats at a controlled temperature to achieve the highest extraction of aromas and color, the wine undergoes biological acid degradation in the barrel without being stripped off from the yeast. Periodic batonnage. 24 months in new French oak barrels from Allier with roasting adapted to the vintage. The wine is bottled infiltrated.
