About the wine
The Cantina Sociale di Santadi is currently the most successful wine-growing cooperative in Italy and Rocca Rubia Riserva its most famous wine. Three hundred small farmers, who own just one and a half hectares of vineyards on average, are advised by experts from the cooperative. One of the most important foundations of Santadi's current success is the commitment to local grape varieties.

Tasting note
Dark berries dominate the first impression. These are complemented with spicy notes of vanilla, leather, juniper. Dense and rich in taste with a fascinating balance between tannin and fullness. A complex red with a long, smooth finish.
Culinary recommendation
Goes well with hearty meat, wild boar, suckling pig and ripe Sardinian sheep cheese.
Vinification
The grapes are stripped and pressed, and the must ferments for about 12-14 days in stainless steel barrels at a controlled temperature of 25-28 °C. During this phase, the must is reinfused frequently, causing the must to produce the noble tannins for which the bush-shaped Carignano is so famous. After malolactic fermentation, the wine is transferred to small French oak barrels in first or second use, in which it matures for 10-12 months.
