About the wine
The dominant Cabernet Sauvignon 2014 — Rocca Rubia Sardegna DOC is the missing piece of the puzzle on your wine rack. The winemaker from the Italian winery Cantina di Santadi has absolutely mastered his craft. Style and finesse are the characteristics of this red wine, which originates in the fertile and sunny landscape of Sardinia. Tasting note
Dark berries currently dominate the first impression. The animal wildness of Carignano lurks right behind. leather, a juicy, fresh steak, chocolate. Dense and full-bodied in taste with a fascinating balance between tannin and full-bodied taste. A complex red wine with a long, soft finish.
Culinary recommendation
Excellent with hearty meat, wild boar, suckling pig and ripe Sardinian sheep cheese.
Vinification
The grapes are destemmed and pressed, the must ferments for about 12-14 in stainless steel barrels at a controlled temperature of 25-28 °C. During this phase, the must is often infused again, causing the must to develop noble tannins, for which the bush-shaped Carignano is so famous. After malolactic fermentation, the wine is transferred to small French oak barrels in the first or second layer, in which it matures for 10-12 months; during this period, the wine undergoes the biochemical, physical and organoleptic development of the wine. The rapid bottling then enables the bouquet to develop at an early stage.
