Tasting note
“Fragrant, fresh and pink” - Bright salmon pink. Aromas of fresh fruit, grapefruit, strawberries and freshly cut grass and wild roses. Light and fresh on the palate, with notes of blood oranges. Fine and elegant with a fruity finish. With this new rosé, Ramón Bilbao brings the traditional Clarete Rosé style back to Rioja.
Culinary recommendation
The ideal summer aperitif. Goes great with white asparagus, meres fruit salad, veal carpaccio and risotto
Vinification
Maceration lasts 4 hours. The saignée method is used, where the juice is squeezed out without a mechanical press, based solely on the weight of the grapes themselves. Exploitation is approximately 40%. This is followed by fermentation at low temperatures of 14°C.
