About the wine
The vinification of this rosé reads like a premium red wine. The grapes are harvested by hand early in the morning from 4 a.m. to 9 a.m. at the latest in small boxes of 10 kg. They are then immediately placed in a refrigerated container to bring the core temperature below 7°C. This prevents spontaneous fermentation on the grapes and their oxidation. In the cantina, the grapes are sorted out from unclean and unripe grapes on a selection table. A process that is extremely rare in rosé production. After pressing, the must is pumped into steel tanks, fermented spontaneously and continuously mixed with the yeast on the bottom (batonnage).
Tasting note
Seductive berry, cherry and herbal notes. These harmonious accents continue on the palate without sweetness and are complemented with lavender and some chamomile.
Culinary recommendation
It goes well with aperitifs, crustaceans and barbecues in general.
