About the wine
The vinification of this rosé reads like a premium red wine. The grapes are harvested by hand early in the morning from 4 a.m. to 9 a.m. at the latest in small boxes of 10 kg. They are then immediately placed in a refrigerated container to bring the core temperature below 7°C. This prevents spontaneous fermentation on the grapes and their oxidation. In the cantina, the grapes are sorted out from unclean and unripe grapes on a selection table. A process that is extremely rare in rosé production. After pressing, the must is pumped into steel tanks, fermented spontaneously and continuously mixed with the yeast on the bottom (batonnage).
