About the wine

Sometimes Champagne, sometimes Burgundy - many cellars still have two exits, one for Burgundy, one for Champagne - that is the story of Les Riceys in Côte de Bar in the south of Champagne. It's no wonder that in addition to great champagnes, Alexandre Bonnet also offers great white, rosé and red wines. And anyone who has a story like this also lives it. The vineyards are preserved in their entirety - trees, flowers, bushes are planted - organic and biodynamic farming, of course - and old stone shelters are being restored. Forest fairy - delicate, light, feminine shape: transparent, so deliciously delicate, a touch of sweet, light red wild berry fruit, floats light as a feather through fresh green, over rocks: so ethereal, fresh and chalky. On the palate of an enchanting nature, without haste or strength: crystal-clear, fresh light red fruit, flapping its delicate wings quickly: lots of ethereal vibration and mineral energy in this transparent weightlessness, and what an enchantingly soft beauty: surrounded by a touch of caramel sweetness. Wonderfully transparent, ethereal rosé.
Vinification
Selective reading by hand. Pressing partly with feet, 5 days of maceration, frequent overpumping, fermentation with the vineyard's own yeasts and 9 months of aging in tanks and burgundy barrels, 2 years in the bottle, low sulphurization.
