Tasting note
The Col de Mez Rosé has a sparkling light pink color. On the nose, aromas of red berries, cherries, bright flowers and sweet spices inspire. The palate is intense with lots of red berry fruit, a refreshing acid structure, a fine perlage and a great harmony between sweet fruit and animating freshness.
Culinary recommendation
Ideal for aperitifs, as an accompaniment to light summer dishes, seafood, fried vegetables or cakes and desserts with berries.
Vinification
The grapes come from various cool prime locations along the river Piave. They are harvested separately by hand at medium ripeness (the pinot around the end of August, the raboso in October). At the winery, the grapes are gently pressed and then slow fermentation takes place in stainless steel tanks with the natural yeasts. It is then clarified and assembled before the second fermentation takes place in the pressure vessel (autoclave) and further storage on the fine yeast. This prosecco has a total acidity of approx. 6g/liter and a residual sugar of 13g per liter.
