Tasting note
Deep rose with purple reflections. The aromas of fresh wild strawberries are balanced with refreshing resin notes that oscillate between mastic and herbs, and blend against the smoky background of the barrel. The characteristic acidity of Xinomavro gives the wine freshness and harmonizes with its intense aroma before it leads to a long-lasting spicy finish.
Culinary recommendation
The ideal accompaniment for grilled mushrooms, seafood, smoked salmon with and without pasta, fish in tomato sauce, lamb from a casserole or skewer, soutzoukakia, grilled eggplants, Asian dishes such as salmon sushi and vegetable tempura as well as spicy hard cheeses.
Vinification
Rose pressing with a service life of several hours. Fermentation exclusively in oak barrels with the addition of fresh resin. Before bottling, the wine is aged in the fine yeasts for about six months. The final selection is an extremely thoroughly processed blend.
