About the wine

Sébastien was just 21 years old when he left his job in a Parisian wine shop in 2002 to prevent the sale of his parents' winery in Sury-en-Vasux. As early as 2003, the switch to biodynamic viticulture took place, rigorously, even the use of copper is dispensed with, machines anyway, processing is carried out with horses. The vineyards resemble natural oases, what diversity, no trace of monoculture. An extremely late harvest with botrytis, a lot of time in the cellar, time instead of chemical helpers, a wheel-cold approach, but the wines are anything but radical, they radiate an inner warmth and calm, a gentleness, a size that is otherwise not found in Sancerre, very large, and far away from the steely, crisp and rampant Sancerre! A revelation!

Tasting note
Meditation into the day - what can you say, this is again such a wine that simply gives inner peace, and in whose calm a lightness and vitality thrives. The scent of blissful harmony, quinces, roses, yeast, and much more, and that's where it already appears, this lightness, this freshness in peace. On the palate, the fine acidity, the tart, slightly bitter freshness flows gently into the harmony, lifting this balance to slight heights, where it floats so gently embedded in oxidative fruit, quince, chamomile, yeasts, slightly salty. Big.
Culinary recommendation
Flaschenpost team recommends this Sancerre Blanc AOC Akméniné to accompany white meat, mussels and goat cheese.
Vinification
Selective, very late hand harvest, 50% botrytis. Direct pressing, fermentation with the vineyard's own yeasts, malolactic fermentation and maturation for two years in old oak barrels on the lees, unembellished, unfiltered, unsulphurized.
