Tasting note
The Steenberg The Black Swan Sauvignon Blanc ensnares the nose with a delicious bouquet of fragrant elderberry and summer blossoms and fine notes of herbal fynbos. Delicious nuances of aromatic lemon zest, fresh grapefruit and nectarines caress the palate. The delicious acidity is wonderfully rounded off and balanced by the full and smooth palate. The crème de la crème among South Africa's best Sauvignon Blancs.
Culinary recommendation
It goes wonderfully with raw marinated fish or with vegetarian dishes served cold.
Vinification
The Black Swan Sauvignon Blanc is a blend of the two best Sauvignon Blanc vineyards on Steenberg and the best grapes of the vintage. The grapes were destemmed/crushed and left on the skins for 18 hours at very cold temperatures, which gives it a more intense scent. The juice was then left to rest for 2 days before fermentation began. Slow and cold fermentation resulted in a fresh but full wine. The wine was stored on lees for 9 months before it was stabilized and bottled.
