Tasting note
Mineral bouquet, minimally oxidative, aromas of chamomile, apricots, mirabelles, bread yeast and fennel. Impressive start on the palate, enormously fine bubbles, very compact, nuanced, well-structured and infinitely long-lasting. The minerality and tartness typical of this vineyard.
Culinary recommendation
Our recommendation: The ideal drinking temperature for the organic sparkling wine is slightly chilled 8°-10°C. The following period is the ideal phase of enjoyment of this wine: now until 2026.
Vinification
The Xarel-lo grapes are fermented in barriques. Traditional bottle fermentation with natural cork. Aged on the lees for over 100 months. Brut nature, no sugar added. Disgorgement by hand without freezing.
