Tasting note
Light, delicate salmon pink. Jumping, almost beguiling nose. Sweet berry fruit, lilac, rose petals, ripe citrus notes. Surprisingly powerful on the palate, very well structured and balanced. The aromas of the nose are confirmed. The refreshing acidity harmonizes perfectly with the flattering aromas of red berries. Medium-long finish, with good aromatic persistence.
Culinary recommendation
Goes perfectly with grilled fish with vegetables or fresh goat cheese.
Vinification
The grapes come from the San Giovanni vineyard, from the gently sloping hills near Bibbona, not far from the coast of the Alta Maremma. The grapes were harvested by hand in early morning hours at the beginning of September. The de-stemmed and gently squeezed berries are macerated for a short time. After pressing, the grape must ferments in steel tanks at a controlled temperature. This is followed by a maturation period of six months, also in steel tanks, followed by bottling.
