Tasting note
Light, soft salmon pink. Protruding, almost beguiling nose. Sweet berry fruit, lilac, rose petals, ripe citrus notes. Surprisingly strong on the palate, very well structured and balanced. The aromas on the nose are confirmed. The refreshing acidity harmonizes perfectly with the flattering aromas of red berries. Medium-long finish, with good aromatic persistence.
Culinary recommendation
Perfect with grilled fish, salmon on a vegetable patch or just like that.
Vinification
The grapes come from the San Giovanni vineyard, on the gently sloping hills near Bibbona, not far from the coast of the Alta Maremma. The grapes were harvested by hand in the early hours of September. The destemmed and gently crushed berries are macerated for a short time. After pressing, the grape must ferments in steel tanks at a controlled temperature. This is followed by a maturation period of six months, also in steel tanks, followed by bottling.
