Tasting note
Nice, deep color when tasted. The first serious nose consists of scents of moist soil, roots, humus and peat, followed by intoxicating floral notes of iris. The nose then develops into fruity notes of raspberry cream, ripe cherries and finally dark chocolate. You can feel a lot of elegance and depth in this wine. It is full and wide in the mouth. It has a touch of warm rhubarb (rhubarb cake, crumble cake), which is typical of large Pinot Noirs. The finish is fresh, with a touch of licorice and ends with very silky tannins. A very racy wine that has a very nice balance.
Culinary recommendation
Goes well with beef tenderloin, fried or battered, as well as meat with sauce, leg of lamb with herbs and cheese.
Vinification
75% of the grapes were ground and destemmed, keeping 25% of the grapes as a whole, and fermented in open vats, which allowed the pomacehat to be cut in. Cold maceration before fermentation for 3 to 4 days, then fermentation at a controlled temperature (23-25 °C) with a peak of 29 °C during one day. 2 or 3 repumping processes at the start of fermentation and 2 pigeages at the end of fermentation. Total duration of maceration: 17 days. Press in a small press. Complete malolactic fermentation. Aging for 9 months in 1 to 3 year old oak barrels. Bottled in July.
