Tasting note
Rich, bright straw yellow with a very fine, persistent perlage. The bouquet is intense and complex with floral notes of white flowers and fruity aromas reminiscent of peaches and pears, accompanied by a subtle yeast note. The taste is fresh and fruity, full-bodied, elegant and harmonious with a long, persistent finish.
Culinary recommendation
For fish dishes, oysters and crustaceans, we recommend Flaschenpost team. Our recommendation: The perfect drinking temperature for the sparkling wine is slightly chilled 8°-10°C. The recommended enjoyment phase of this wine is in the following period: 2-7 years after the harvest.
Vinification
A few words about vinification: This noble vintage sparkling wine is produced according to the traditional method. The Pinot Noir grapes are carefully destemmed, gently pressed and the must is immediately separated from the skins. The white must is fermented in stainless steel tanks and malolactic fermentation is suppressed. With the liqueur de tirage, the young wine is bottled in order to undergo so-called bottle fermentation. The wine remains on the lees for 32 months. The bottles are then shaken against the pupitres by hand and finally disgorged. The filling level is set with the same sparkling wine and not with a liqueur de tirage, so that this sparkling wine can be described as non-dosé.
