About the wine
The absolute speciality on the Weingut Bietighöfer are the wines of the “Grande Reserve” line, spontaneously fermented on their own yeast in new 500 liter wooden barrels, which impress with their authenticity. Young winemaker Stefan Bietighöfer courageously implements new ideas - that's well received and promises a bright future. Winegrowing was already practiced on Weingut Bietighöfer in the 17th century and Stefan Bietighöfer knows the importance of high quality. With passion and diligence, he continues what generations have built up before him, showing his keen sense of the best locations and the right measures at the right time. As a member of the “Generation Riesling” association, the direction of the young winemaker is clear: He is committed to (quality) Riesling, looks beyond national borders and impresses with authentic wine. Stefan focuses all work steps on environmentally friendly management. Weingut Bietighöfer cultivates around 19 hectares of vineyards. The wines acquire their typical character in the interaction of the mild climate with the clay, sandy and limestone soils. His wines do not undergo temperature control during fermentation, no corrective interventions are carried out in the cellar, they are not pre-clarified, but spontaneously fermented in the 500 l tonneaux of the Sylvain Tonnellerie from Pomerol, neither brightened nor filtered and they are allowed to mature in barrels on the whole yeast until they are fermented thoroughly.
