Tasting note
From light straw color with fresh green reflections in the glass, the Spier Signature Chenin Blanc gives off wonderful aromas of guava, pear and apple as well as subtle hints of exotic lychee. An incredibly crisp and fresh Chenin Blanc with a strong finish with a well-balanced character.
Culinary recommendation
Perfect in summer with friends over a picnic with sesame-coated chicken goujons and grilled goat cheese crottin on crispy bruschetta.
Vinification
The grapes for this wine come from selected blocks on various farms in the coastal and Breede River region of the Western Cape. The grapes come from trellis and bush vines and produce 10 to 15 tons per hectare. The grapes were harvested by hand, destemmed and lightly crushed before being pressed and briefly macerated on the skins. The free-wheeling vehicle settled in the tanks overnight. The next morning, the must of the individual block selections (some were kept separately and some were mixed) was removed from their yeast rub and inoculated with selected yeast strains. Fermentation was temperature-controlled. It took three months to mature in order to obtain additional body and elegance. The wine is not aged in wooden barrels.
