Tasting note
Austria's most characterful red wine variety. Josef Umathum, a pioneer of near-natural grape cultivation in Burgenland, is very fond of this grape variety. The seductive fruit of St. Laurent is best compared to a good Burgundy. Bright ruby red in color, the scent of dark fruits reminiscent of blackberries, firm structure on the palate with lots of fruit of dark berries and a spicy, mineral finish.
Culinary recommendation
Goes well with mushrooms, venison, lamb, pasta.
Vinification
Fermentation takes place with the skins to leach out the red dyes and tannic acid (tannin), after about 2 weeks, the young wine is transferred to wooden barrels and the acid is degraded organically (malolactic fermentation). The wine then matures for over a year in large oak barrels to achieve stability and maturity.
