Tasting note
The Steenberg Sauvignon Blanc exudes inviting aromas of fresh lemon peel, Granny Smith apple, peach, accompanied by a subtle creaminess. On the palate, there is wonderful lushness and a strong mineral core as well as delicious citrus blossom notes. It has a juicy fresh acidity with a stunningly fresh and crunchy finish.
Culinary recommendation
It goes well with an aperitif, but it also goes very well with summer dishes with fish, seafood or vegetarian creations.
Vinification
This wine consists of a range of Sauvignon Blanc vines from various locations on Steenberg - harvested at different degrees of maturity. Each block results in unique characteristics ranging from flint, grass, green pepper to gooseberries and ripe tropical aromas. The grapes were harvested by machine in the cool, early hours of the morning to preserve the delicate aromas. The peel was macerated after pressing for 8-24 hours at 10° C. The juice settled overnight, then it was removed cleanly, inoculated with yeast and allowed to ferment for up to 30 days at temperatures between 11° C. and 13° C. After fermentation, the wine was left on the fine yeast for 60 - 90 days until it was blended.
