Tasting note
On the nose, the wine shows cinnamon, black cherries, elegant spices and charcuterie. Well-rounded tannins make for a wine that is accessible but also has enough structure and balance. Serious, smoky, meaty and compact.
Culinary recommendation
An excellent wine that goes very well with stews. But it also accompanies fantastic short-fried lamb or game.
Vinification
Rooted in the oldest wine-growing soil in the world, which consists of decomposed granite on the higher slopes of the Helderberg, a location that has proven its worth as a Grand Cru site. This vineyard enjoys the refreshingly cool False Bay (Atlantic Ocean) breezes during the day and cool night air flowing down the mountain, resulting in uniform maturation and good natural acidity. The macroclimate is maritime with cold winters and sunny, warm summers. The two-hectare individual sites are carefully maintained by hand to ensure the highest quality. Organic and biodynamic practices are used, which include the avoidance of pesticides, herbicides and chemical sprays. In addition, compost, teas and biodynamic preparations produced in-house are used. The grapes were picked by hand in small boxes and the harvest was reduced to ensure that only the perfect grapes were used for this wine. Biodynamic practices were also used in the cellar. In the winery, the grapes were sorted twice — first as whole bundles and then as berries, to make sure. Aged in 20% new French oak barrels.
