About the wine
Grillo is a cross between the two varieties Catarratto and Zibibbo (Moscato) native to Sicily. While Catarratto brings a lot of freshness, Grillo has its fruity flavors from the other parent Zibibbo.

Tasting note
Notes of pink grapefruit and juniper on the nose, balanced, firm and complex on the palate.
Culinary recommendation
Goes well with fish dishes, risottos, soft pecorino and tuma.
Vinification
Hand picked between August 31 and September 5. The grapes are cooled to 12-14° C., destemmed and gently pressed, then cooled to 2-3° C. for clarification. When the sediments have settled, fermentation begins at 14°C for 14-20 days. Until bottling, the wine remains on the fine yeast with weekly battonage.
