Tasting note
Complex bouquet. cocoa powder, plums, blueberries, sweet spices, fine wood and dried fruit. Nice density, warm and very full with ripe tannins, long finish. Perhaps one of the most beautiful wines in Sardinia.
Culinary recommendation
Hearty meat dishes made from game, lamb and beef, which are braised or prepared on the grill as usual in Sardinia. We always recommend grilled fish. Not trout - no - they must come from the sea and have their own taste. Knobli, herbs, olive oil and lemon go well with it. Delicious with mature cheese made from cow's milk. Or an overripe sheep cheese from Sardinia - the Casu Marzu.
Vinification
The grapes are harvested by hand. The vinification takes place in steel tanks, the biological acid degradation in barriques. Terre Brune matures in barriques for 16 - 18 months and in the bottle for another 12 months.
