Or an overripe sheep cheese from Sardinia - the Casu Marzu.

The grapes are harvested by hand. The vinification takes place in steel tanks, the biological acid degradation in barriques. Terre Brune matures in barriques for 16 - 18 months and in the bottle for another 12 months.
