Tasting note
Concentrated aromas of dark berries and cedarwood on the nose are complemented by lovely sweet fruits and polished tannins on the palate. The wine has a long and strong finish and will be suitable for long storage.
Culinary recommendation
This complex and full-bodied wine goes well with beef and game dishes.
Vinification
The wine was named after the French writer Francois Rabelais. In one of his books, the giant Gargantua builds a church called Thélème. It stands for a new world order. According to the principles of the Renaissance, all people are equal and education for all is seen as the key to the future of our society. Revolutionary thoughts in 1564. Thelema stood not only for a new world order but also for paradise on earth. There were no walls, the time was not controlled by clocks and everyone was well dressed and fed. This wine stands for the best that Thelema brings to the bottle. It is an attempt to create a wine that comes close to the feeling and attitude of Thélème. The grapes are handpicked, destemmed and fermented in stainless steel tanks. After fermentation, the wine undergoes prolonged maceration and is then pressed and transferred to wooden barrels for malolactic fermentation. The further ageing takes place for 18 months in new French barrique barrels.
