Tasting note
The Tokara Directors Reserve White is presented in a glass of delicate straw color and sparkling brilliance. It exudes a complex bouquet of ripe passion fruit and pink grapefruit that captivates the senses. There are also pleasant notes of lemongrass, elderflowers and freshly baked brioche. On the palate of remarkably rich, full-bodied character, the aromas already absorbed by the nose also unfold in the form of irresistible taste nuances. On the finish, the wine ends with immense clarity and depth. A white masterpiece of ingenious wine craftsmanship.
Culinary recommendation
It goes best with creamy seafood dishes with saffron or grilled white fish.
Vinification
After manual harvesting, the grapes were destemmed, crushed and immediately pressed. The resulting free-flowing juice and the juice obtained through further pressing were allowed to rest separately overnight before the clear juice was skimmed off the next morning for further production. Yeasts were then added to the juice and filled into the barrel for the fermentation process. Sauvignon Blanc was filled into 400L barrels and Semilllon into 225L barrels. The French oak barrels used made up 29% new wood. After fermentation was complete, the wines aged for nine months with regular stirring on yeast (batonnage). After the maturation period was complete, Sauvignon Blanc and Semillon were blended, stabilized, filtered and bottled.
